These cookies are good, not just good, addictive! They are also super easy.
1 1/2 cups white sugar 1/2 cup butter, softened 1 teaspoon vanilla extract 2 eggs 2 3/4 cups all-purpose flour 1/4 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon Kosher salt 2 tablespoons sugar 2 teaspoons Cinnamon (I love the Saigon kind)
Directions: 1. Preheat oven to 375 degrees. 2. Combine 1 1/2 cups white sugar, butter or margarine, vanilla and eggs. Mix well til light and fluffy (or as I do dump into Kitchen Aid mixer). 3. Stir in flour, baking powder, baking soda and salt. Blend well. Shape dough into 1 inch balls. Combine 2 tablespoons sugar and 2 teaspoons ground cinnamon. Roll dough in sugar/cinnamon mixture and place 2 inches apart on very slightly greased baking sheets. Lightly flatten with the back of a spoon (or if you are lazy like me your hand). Bake 8 to 10 minutes. Immediately remove from cookie sheets. Try to stop your family from inhaling before they cool.
